All-Purpose Chinese Cold Dish Dressing (万能凉拌汁)
As a lover of Chinese cuisine, I find myself enjoying cold dishes (凉拌菜) whenever I eat in Chinese restaurants.
Realistically, we know that these cold dishes aren’t hard to make because all the vegetables ingredients used can easily be found in our supermarkets. All we need, is the dressing to bring everything together.
Here’s an all-purpose dressing recipe that can be used for noodles and vegetable side dishes that I like to use when I crave for a simple Chinese dish at home.

Ingredients
3 cloves of garlic
1 tbsp of chopped onions
2 tbsp of vinegar
3 tbsp of light soy sauce
½ tbsp of oyster sauce
1 tbsp of sugar
1 tbsp of water
Salt (optional)
Chili powder (optional)
Pepper (optional)
Directions
- Combine minced garlic, chopped onions and chili powder in a bowl.
- Heat oil in a pan until it starts to smoke.
- Pour hot oil into bowl. The aromatics will start to sizzle and produce a fragrant smell.
- Add oyster sauce onto the bowl and mix while the oil is still hot.
- Add the rest of the ingredients into the bowl and mix well.
Notes
- This dressing is great for cold mixed noodles and vegetable side dishes.
